Nikki Morgenthaler 

Blogger and Student

Hi, I'm Nikki, a college student by day and home cook by night.  Eating healthy and staying active are a couple of my favorite things.  I love exploring, trying new cuisines, and putting a healthy twist on classic dishes.  In college, it can be hard to find the time and supplies to cook on a daily basis, but I try and cook as often as possible.  It's important to not only keep up with my studies, but also stay active and eat mindfully.

My love of all things food started in middle school when one of my best friends and I started baking cupcakes. We had dreams of opening up a small, successful cupcake shop when we graduated from college. The excitement for creating whimsical cupcakes sparked my interest in cooking all together.   After many batches of cupcakes, I started to understand things like what flavors worked well together and how to balance sweetness. I didn't want to limit myself to just cupcakes, so I got creative with my breakfast. Now, I try to cook every meal and support a balanced diet.  Even though I don't expect to own my own cupcake shop anymore, I still dream to eventually open up a small cafe where I can bake and cook to my heart's content.  

Eating for your health doesn't have to be time consuming, expensive, or depriving.  Through this blog, I hope to share my unique recipes, help others develop (or maintain) well-balanced diets, broaden others horizons to be able to try new things.  Thanks for looking at my blog and I hope you learn to love food as much as I do!
